DiabetesDiabetes is due to improper functioning of insulin, the hormone that converts blood sugar into energy. The resulting excess sugar, circulating the body with blood, passes through to the kidneys and urine. The symptoms are extreme thirst and an enormous amount of urine. A diet rich in meat and fat creates insulin insensitivity. A diet high in fiber-rich complex carbohydrates, such as vegetables, grains and fiber-containing fruits, beans and peas, provide calories over a long period of time, therefore keeping blood sugar at normal levels. This diet also lowers glucose and insulin concentration and lowers total cholesterol level. Diabetics should eat their three meals at fixed intervals to make sure that the blood sugar level is under control. Low blood sugar levels can damage the brain and bring about a hypoglycemia attack. Chinese medicine regards diabetes as excessive lung and stomach fire and kidney yin deficiency, a result of improper diet and emotional distress. Treatments include removing heat, nourishing yin, moistening the lungs and promoting the production of body fluids to quench thirst. Ginseng, Chinese yam and astragalus are commonly used to regulate blood sugar, and Chinese wolf-berry is used to strengthen kidney and lung. Diet for diabetics should be low in refined sugar and refined carbohydrates such as noodles, pasta and bread. Onion and Chinese celery have sugar-lowering chemicals similar to anti-diabetic drugs. Eating animal's pancreas (see more information under food therapy/oral tolerization section), kidney and liver can increase your insulin level to regulate sugar metabolism. Eel is also effective in regulating blood sugar. Watermelon, winter melon and mung beans can reduce heat and replenish body fluids. The following recipe is tried-and-true and very effective in controlling blood sugar. Do not be turned off by pig pancreas. It is far better to take pig pancreas soup and not becoming a diabetic than having to inject animal based insulin (from pig or cow pancreas) after becoming a diabetic.
